This recipe is a result of having been inspired last week by a simple, sugar-free recipe for jam that took under a half-hour to prepare. I adapted the recipe to my tastes and – ta da! – the result is a spreadable, sweet and sour sugar-free, healthy-fat-packed plum jam. It holds together well because of the addition of ground flax seeds. I kept mine quite chunky, but you could thin it out to your desire. Enjoy!
Homemade Quick and Easy Ground Flax Seed and Plum Jam
This recipe is a result of having been inspired last week by a simple, sugar-free recipe for jam that took under a half-hour to prepare. Add to a pot over medium heat. Add 1/2 cup of water and salt. Stir and put a lid on the pot. Bring to a simmer and lower the temperature so that it doesn’t boil. Keep it simmering for 20-30 minutes, or until the mixture has thickened and the apple is tender through and through.
Set the pot aside and let the mixture cool down a bit. Add the ground flax seeds and lemon juice and mix the ingredients together, mashing the chunks with a fork to make the mixture smoother.
Mix thoroughly and put in an airtight container. Let it cool down and thicken further in the fridge. Serve and enjoy!
